I've had several requests to post the recipes for the other items served at a recent fundraiser dinner. This is how to make the "Island Rice." This is one of my wife's new favorite dishes. It makes a great side dish and adding grilled chicken or shrimp could result in a nice entree.
Island Rice
- 1 cup sliced almonds
- 1 cup unsweetened grated coconut
- 1-1/2 cup canned mandarin oranges, drained
- 1-1/2 cup canned crushed pineapple, drained
- 1 cup red bell pepper, chopped
- 2/3 cup green onions, sliced
- 4 tablespoons prepared mango chutney
- 1 teaspoon grated fresh ginger
- 2 uncooked cups long grain rice
- Salt and pepper to taste
Preheat oven to 300 degrees and toast the coconut and almonds by spreading out on a baking sheet and toasting for about one minute or until golden brown. Cook the rice as per instructions. Add the almonds, coconut, and other ingredients to the cooked rice and stir to combine. Salt and pepper to taste. Serve immediately or keep warm until ready to serve.
