Gnaw Bone Food and Fuel

Hpim1335_1Last week my travels took me though Gnaw Bone, Indiana where I stopped by the Gnaw Bone Food and Fuel for one of their famous tenderloin sandwiches. This sandwich has garnered a significant amount of attention and has been featured by Gourmet Magazine, The Splendid Table, and Road Food. I can't believe it took me 10 years to try it out. I've eaten my fair share of tenderloin sandwiches and even tried to make the case here for seeing this Hoosier favorite elevated to the stature of the Philly Cheese Steak.

Hpim1336The Gnaw Bone tenderloin is significantly different than others I've tried. The biggest distinction is that fact that it is deep fried in a pressure cooker which results in a softer, more tender crust. This is a cooking technique most often associated with "broasted" chicken. Most tenderloins have a very crunchy coating but the Gnaw Bone's tenderloin lets the flavor of the pork come through with less attention to crust. I like the change.
